A Family Story in Three Chapters

From Jerusalem to Lund

On May 12, 2014, Sweden's first hummus bar opened its doors. Ilan Shofer, with extensive experience in the industry, drew his inspiration from Jerusalem where he has his roots. Sweden was ready for something new and fresh while people were conscious enough about the environment and their health.

Ilan wanted to create a new trend of fast food that was delicious, fresh, and healthy at a realistic price adapted for the student city of Lund.

Ilan's goal was also that everyone should be able to eat the food, which is why Hummus Bar became vegan/ovo-vegetarian. The food is completely lactose- and gluten-free (gluten-free bread available).

Everything is made from scratch on-site with fresh ingredients for the best possible result.

Hummus is not just a dish — it is a thousand-year-old food culture from the Middle East. From simple chickpeas and tahini, a dish is created that unites an entire region. It is this tradition that Ilan Shofer wanted to bring to Sweden.

The university city of Lund, with its open and curious food culture, was the perfect home for Sweden's first hummus bar. Near the university, in the heart of Skåne, with guests from all over the world.

About Ilan

Ilan Shofer has a long line of restaurants behind him. Among other things, he introduced pita bread (1984) and falafel (1985) to Sweden. After that, he opened and ran several major restaurants in Lund including Falafelkungen, Mediterranean, Gräddhyllan, Bagel Express, and Ilan's Restaurant.

With a love for the nutritious chickpea and a passion for hummus, the idea of Hummus Bar was a natural choice.

Everything is made from scratch on-site every day. No additives, no shortcuts — just real food with fresh ingredients.

Made from Scratch

Our hummus is prepared daily on-site from dried chickpeas. Nothing comes pre-made — every sauce, every dish is made from the beginning.

Dried Chickpeas

We use dried chickpeas that are soaked and cooked on-site every day. This gives a creamy texture and rich flavor that canned chickpeas can never match.

Premium Tahini

Stone-ground sesame seeds give our tahini a smooth, nutty flavor. Tahini is the backbone of every hummus dish — that's why we only choose the best.
